Most of the time you can obtain the mail server info from either your control panel when logging in to your host, or by requesting this information from your host directly.
I was able to type the email server for outgoing mail, but what about for incoming mail? When testing my login app from within dreamweaver3 on my local machine, it is not working. I am not getting mail back. I am receiving an error, when I try to retrieve a password using the "visitors_EmailPW.php" password option. PLEASE HELP ASAP

The server settings in Security Assist and Universal Email are for sending email only, not receiving them. When you enter your correct outgoing mail server info the script should send an email to the user's email address in their record.
If you are testing locally this might be part of the problem. Do you know that your local mail server is working? If so you should be able to just plugin the details for it in SecurityAssist. You will need to work with a mailserver that is known to be working and sending emails properly first.
