shipping not showing in checkout

Yes, we definitely want the shipping to display on our site before they are routed to PayPal. I've had several people test the site, and they all were confused as to how the total jumped substantially when they went to PayPal. Especially since PayPal does not break down the costs - they only show a total (see attached screen shot).
So, I'm assuming that a "calculate shipping" button (which simply refreshes the page), placed before the "Continue" button would do the job. My only two questions are:
1. Is there a reason why I would want to have the customer fill in the entire shipping form on our site - only to have to do it again at PayPal?
2. If not, can I pair the form down to just the zip code to calculate the shipping?
