How to modify eCart after Wizard creation

I'm setting up a cart using the latest version 5.0.3 and have a condition where I will need to modify things like Authnet IDs and Shipping. I need modify these "after" the cart is created.

I've already experienced some errors in dropping the cart pages into prior formatted pages so I have a clean set of Wizard generated pages to start.

Is there a way to access the shipping and Gateway values AFTER the cart pages are created?

For instance I need to remove Shipping (UPS) and then add it back later after the client finds his user account details?

Is this possible? Is there a single source config file to search out that has the base parameters that I can toggle on and off?

Does everyone generate simple wizard pages then overlay templates each time you make a significant change to a cart?
