You can, but it might effect deliverability and the email could be marked as SPAM and you would never get it. It is better to click the "From..." button and use the email address from the form as the "Reply To" address and not the FROM address. Use a static FROM address with a @domain.com that matches the domain of the website so that it will be more likely to get past SPAM checkers and can be validated and delivered properly.
