Is there a way to configure a form created with Send Email to have the emails arrive to my inbox with the From Field populated with the information submitted by the user as their email address? Currently when I fill out the dialogue for From in the Send Email interface I am only able to populate that with one static piece of information. Thank You.

You can, but it might effect deliverability and the email could be marked as SPAM and you would never get it. It is better to click the "From..." button and use the email address from the form as the "Reply To" address and not the FROM address. Use a static FROM address with a that matches the domain of the website so that it will be more likely to get past SPAM checkers and can be validated and delivered properly.
