Use Security Assist to build MySQL Table?

I can successfully create a suite of logon PHP pages if I allow Security Assist to build the MySQL table. However, even though SA recognizes my previously built MySQL tables, I cannot enter data via the registration form - I get blank fields (not NULLs) in the dB table. I'm trying to use a 'hash' so the data is encrypted -- which works fine if I allow SA to build the table but does NOT work if I try to use a previously built table. Must I re-configure the existing MySQL tables into some other format (I prefer using utf-8)? Or must I allow SA to build any MySQL tables that I need?
