I need to update my older mysql sites with mysqli and I'm not exactly sure where to start.

I have several sites that I need to update and I'm not exactly sure of what areas need to be changed out. I've attached a few example pages and would appreciate any input. Thanks

You would have to update anything that references the database. So not anything on the pages you have attached since they aren't database driven.

Great. The only thing we use the database for with these static product sites is to write the order to it when it's placed. Does that mean that only the confirm page needs to be updated? These sites were created with a previous version of ecart, by the way.

Yes. You can just create a mySQLi connection and then update the two server behaviors on the confirm page and change the connection used to the mysqli one.
