Does it happen for all of your sites? It could be an issue with a particular database or connection. I haven't noticed anything like this and you are the first to report it, so I'm guessing it might be an issue with your particular configuration somehow.
Issue remains when starting up and using SA (from a DataBridge installation).
I am using MAMP Pro, which has assigned port 8889 to MySQL
The SA wizard has just taken under 30 minutes to create 5 php pages - my workspace is now lagging to the point wher it is unsable
If the apps performance is linked to MySQL setup in some way, what steps should i be taking to identify/resolve
Any ideas or suggestions appreciated.

It is probably linked to the database connection but it is hard to say what or where. I seem to recall someone else reporting something similar a year or so ago and they fixed it by installing a different version of mysql or mamp... maybe try XAMP. I couldn't be sure though because that really isn't my area of expertise. I can tell you that that behavior is not typical and I'm pretty confident it does have something to do with your database or server settings. Have you tried connecting to your live remote database? It would be interesting if you had the same result, because that would at least give you information about where the problem is. If it is fine with the remote database then it is definitely you local database causing the problem, if not then it may be something about Dreamweaver itself on that machine.
I got this issue on my mac also, but I use Vagrant with Scotch Box for my environment.
