Exclude specific product category from Shipping - possible?

We're already saving the product category as a cart column for each product. Is there a way to exclude products from a certain category from being included in the Shipping calculation/rules?

So if the weight is zero, UPS doesn't calculate any shipping?
Problem is though, we have a flat rate of £2.50 added to the UPS shipping calculation. Should I add a if TotalWeight > 0 clause to the UPS shipping rule?

Yes that should work... just add a condition to each shipping rule so they only run if TotalShipping > 0
