Is there anyway to add the ability to enter unique Meta tag information for each blog in this tutorial?

yes, on the template page create content areas for:

meta-title
meta-keywords
meta-description

and use those content ares in the title, keywords, and description tags.

I thought this was going to be easy but not so much (sorry).

the title content area is not in the title tag

i dont think you need the meta property="og:title" tag, try changing that to:
<title><?php echo strip_tags(WA_getCMSContent($database_PowerCMSConnection, $PowerCMSConnection, 'blogPost', 'BlogPostTitle', false, $row_Recordset1['ContentPageSetOrder'])); ?></title>

Doesn't seem to help. Also, when the articles to the blogs are posted on LinkedIn neither the blog title or the blog image show up. Not sure if you have any idea why that happens but I thought I would ask.

I restored the files to the way they were when we first address this issue so the "og:title" tag is still there. See PM for the rest.
