Can I get eCart to display three boxes, one for a customer to type in their Customer Name, invoice number and invoice amount and they can select to pay the invoice.

in the eCart object, create 2 new columns for the name, and invoice number.
in the add to cart behavior, set the Price, Name and Invoice Number column fields to be updatable from a text box.
when adding the cart display manager, you will probably want to add these fields to the display on the second step.
