Editing Captcha Colours, Noise etc.

I must be having a particularly dim day as I cannot find anywhere to change the setting for the Captcha as I find the default settings unreadable

I don't have version 2 installed but in version 1 to edit captcha settings you would go to the edit design wizard. Select Form Elements the captcha from the drop down menus.

If I am on the right screen the option to edit appears to be grayed out

No, this is not the right screen.

The captcha settings are changed in the edit design interface, not the edit form contetns interface.

On the first screen, select to edit the design. When editing the design select form elemtns, then captcha to edit the captcha settings
