Updating Products with Options

I have a number of products, some with and some without options, in my store that is currently under development. Updating products without options works fine. Updating products with options works fine as long as I check "update all options" for the field being updated. However, if I do not check the "update all options" box the database does not get updated, and the field I'm trying to change on the Product Update page reverts to its original value before the attempted change.

I realize this is difficult to troubleshoot without having access to the admin area, so if you think it is necessary, I can provide access via the ticket process.
