Clarify strategy - add to cart or separate session?

For those experienced cart users this is possibly a dumb question

Just trying to get something clear in my head

When traversing an order....
...should I ....

...Only add items to the cart if they are needed in the cart calculation process.
All other data should be stored in session variables and push that into the final order info in the database

or

It doesn't matter if the odd bit of data gets stored in the cart?

it doesn't really matter if the odd bit of data gets stored in the cart if your cart is set to use sessions.

If you set the cart to be cookie based though, this can become a problem since cookies have a maximum size.
