So are you saying we should create a site or checkout page for Authorize net using eCart and copy those server behaviors (how would we do that?) and then go to the powerstore site and replace those behaviors from the one we just made (the "authorize test" site)?

In the authorize.net case you would probably only have to replace the local checkout server behavior in the powerstore with the localcheckout from the created sample.Paypal standard is actually more difficult since their systems are less similar.
