Using Form Builder and ECart for Registration

Hi,
I have a client who wants to have a registration form (for conferences) on his website. I have earlier versions of ecart (4) and form builder (1) and universal email (3) (but would upgrade if necessary). Can you tell me whether the above old versions will handle registration details (ie customer name, address etc plus date of event choice - through drop down menu), plus sending out autoresponder to client to say that the event has been booked, plus sending email to my client to say booking has been made. I would also like to be able to have a "sold out" feature on certain dates as they become filled.
Can you tell me if this is possible (without too much messing around of code etc) with the above two products or possibly the upgraded versions?
