PRE-SALES: A new install question

That makes total sense.

But, after I create the first site will I have access to installation wizard, again, in order to start a new project utilizing a different template in another folder?

Or, will I be able to start a new project in a settings other than the install wizard? I know trying to access the install wizard "again" doesn't make sense either....that's why I know I'm missing something in the documentation, which were only about 3 pages long.
