CMS Admin Area - Editing Images?

In order to make the header image updatable like this in the CMS you would need to create a new SiteSculptor design that had an editable region for the header. There are some limitations doing it like this though. If the region is editable that means that it can be different for each and ever page, so updating the logo for the entire site would require you to make the changes to each and ever page in the site. I would suggest that you make the changes directly in the template, or you can switch out the logo by saving the new one to the same location as the old one with the same name, this will overwrite the existing one and use the new one for the image without any other updates.

As for altering page names once the site is complete this not supported with SiteSculptor. You could change the name that you see in the navigation by updating the menu file but the filename will remain the same.
