Help with users and admins

I have been through the tutorials for DataAssist, SecurityAssist. I am setting up a Wholesale product site, trying to use the supplied Ecommerce Database from WA. Here is what I want to do....

The whole site (a subdomain from their main site) needs to have restricted access to accounts that are set up by the admin. So.... with the database supplied I cant find a "user level" field to designate the admin from the users.

I am assuming I need to -
1) Try to setup the DB provided to have the proper fields I need to do this. (How do I do that?) Also I need to have a "size" option on my products. Not sure how to do that either. I have used phpmyadmin and can insert fields but I have no idea if I am doing right. Like I entered a field in the users table named "UserLevels" and restricted it to a 1 digit integer. I figured "1" for admin and "2" for regular users.

2) once I get the DB fields right, I assume I need generate the admin "back end pages" - I went through the tutorial and could not figure out how to grant only admins ("1") access to all those php files that allow you to edit and search and stuff.

3) after I get the admin able to edit the DB stuff through the generated php pages, I need to somehow setup the users to be able to browse the products after logging in....

Aw, my brain hurts! and I havenet even got to the shopping cartstage yet!!! this all sounded so easy on the site before I purchased the Ext Lib ...
