Editing the Text on the Images

Hi

I am struggling to find the answer to how i can edit/delete the text which appears on the images on the home page wen i try to design a site using site assist pro. Please can you tell/show me how this can be done. I know how to replace the image but not how to edit the text displayed on the default image, which i would like to use.
