Want to send email from ipn to 'payer_email'

Not using ecart….this is from a website where donations are made by PayPal. I have an IPN set up to receive the donation information and the ipn takes the posted information from PayPal and inserts into my database. $_POST[‘payer_email’]; is one of the PayPal variables received by the IPN and I want Webassist Universal Email to send a thank you email to the donor. I’m not sure how to get the payer_email (which is the donor’s email address) correctly into the addTo part of my email code?
