Universal Email Contact Form Protect From Spammers

I have a contact form that has Captcha on it, but it is still being bombarded with spam anyway.

I'd like to remove the Captcha since it really isn't doing much anyway and do something else. So my question is. Is there a way to validate a hidden form element and if the form element is empty the contact form sends the details to a good email address and if the spam bot has filled out the form element then it sends the email to a catch all email address just for spam. Since the form element is hidden it would not be filled out by a real person because they can't see it, but since spam bots would see it they would put information in it to be submitted. Any Ideas how to do something like this? Thanks.
