I think the easiest option would be to use the Server Behavior:

Webassist->MySQLi->Data Management->MySQLi Execute Query

Then you could use a query like:

UPDATE products SET ProductQtyStock = ProductQtyStock - param1 WHERE ProductID = param2

Bind the two params to the eCart columns and cut and paste the resulting code into your while loop.
