dynamincally add another form select after current has been populated

Hi, here is the scenario, In my admin, I have a 'create product' form.

On this form is a single 'category' select list where the client can assign the product to a category. So on form submit the general product data is stored in a new record in the product table, and the category id AND product id are stored in a catalog table. (So that the product can exist on many categories).

My idea is as soon as the client chooses a category from the select list, then a new category select list appears where the client can select a second category...this process repeats until the client stops choosing a category from the select list.

On form submit the 1 product record is created. and at the same time 'many' catelog records are created on how many categories the client had selected.

What would be the process for this? what type of javascript would I need to include. and is there a webassist server behavior that can help with this?

Chris
