Send a copy of the insert and update pages please, and the webassist/email folder so i can take a look, you can mark the attachments as private.

I just tested on my Win7/CS5.5 installation, On the server functions tab, selected the default template and the webassist/email/templates files where created for me. perhaps if i can look at your ages, I can see what may be causing the issue.
