Dynamic options for products

Hello i been reading every post that has the options for product but i can not find any where i can add dynamic options they are all options that i have to declare in the eCart object Columns, my goal is to use the options lists for product but i want to be able to add any new options if i get new merchandise, for example for bags i have options for size, weight, colors, has handles or not, paper, plastic etc.. but my client also sells shoes so there would be new options for shoes, he also makes ropes and each year there are new products that they intend to fabric like cloth, mantles, jars, toys, etc... so i need that every year my customer from the admin panel can add new option groups i mange to do that part without problems with databridge doing some custom codes, but how can i add these new groups without having the client call me to add them to the cart object is there any way i can do this dynamiclly on the add to cart button?

i manage to build the form for the add to cart with nested repeat regions to show select list or text box, but i dont see where i can add them without having to edit the cart object or if i can add them all into one single post but have no idea how to do that cause every product have very difrent options.

Any ideas?
