Checkout Wizard and UE - Re Enter?

I was using the checkout wizard and at first I noticed that I forgot to have the shipping address displayed so I just reentered the wizard through the insert menu and found out that it doesn't update the pages even though all my information was still saved in there.

Second I looked at the support pdf and saw that it is supposed to go into universal email to make a receipt, and mine did not do this (i have UE/CSS form builder installed).

How can I modify the checkout pages once they are created? If I can't what do I delete so when I do reenter the wizard, it creates new pages? And how can I have a receipt created?
