Let's start a discussion about PHP versions

UPDATE

My Hosting company says: The database server f was updated to MySQL8 18
days ago (June 24).

Apparently php versions 5.6 and older do not play well with MySQL8's
default character set. If there is a work-around where you can make php5
work with MySQL I do not know what it is.
As for changing php versions this account is calling custom php already.
Server default is 7.4 and this account (a legacy account) runs php as
Apache module.

SO, I guess the breakdown is between PHP 7x and MySQL 8 Is there anything in this thread that targets that issue specifically?
