They use to have a video but I don't see it there. They are probably making an even better one. :)

Have you downloaded the Support Resources from your Download page?

Just noticed this:

For example, in Dreamweaver>Insert>WebAssist>Dynamic Dropdown>Create Dynamic Array, "create dyn. array" is in light grey

You have to start with a PHP page and have your site definition set properly:
