CGI form mail vs formbuilder

I know how FormMail working. But I do not how form builder is supposed to work. It seems to be another way of thinking. Moreover, it is dynamic. This feels like a premium for me when I just want to run FormMail functions. But how can I still use form builder and at the same time use formmail. Below are the first lines of the old form. It shall be the same data but now a new design. So then I thought to do it in the form builder.
