I'm not happy with 2010-12-01
I would prefer to see 2010-December-1 OR, ideally, December 1, 2010.
I don't see any long date options.
Please advise.

you can edit the line:
dateFormat: 'yy-mm-dd',
to change the format to:
dateFormat: 'yy-MM-dd',
OR:
dateFormat: 'MM dd, yy',
see this page for details on the abbreviation that can be used to create your format.
formatDate
seems like my database only likes yy-mm-dd so I guess my challenge is actually wth the page that displays the date, which is separate from this page that is creating the date record.
I will look into that instead.
you can change how the date displays on the page using the date function:
<?php echo(date("F d, Y", strtotime($row_rsName['ColumnName'])); ?>
