Please see the Paypal eCommerce Toolkit recipes extesnion, the recipes contain information on how to add product option to the payPal buttons created by the Paypal eCommerce toolkit. The recipes extesnion is available for download from the download center.

bassicly, you add two hidden form elements and two select lists:

html:
<input name="on0" type="hidden" id="on0" value="color">
<input name="on1" type="hidden" id="on1" value="size">
<select name="os0" id="os0">
<option value="red">red</option>
<option value="yellow">yellow</option>
<option value="blue">blue</option>
</select>
<select name="os1" id="os1">
<option value="samll">small</option>
<option value="medium">medium</option>
<option value="large">large</option>
</select>

if this is not working for you, please post a link.

Can I just ask, is the size, for example, supposed to come up when you first click "Add to Cart" under Options? If so, this isn't happening for me.

Here's my code:

html:
<form action="" method="post" name="PayPal_Options">
<select name="os0" id="select">
<option value="small">Small</option>
<option value="medium" selected>Medium</option>
<option value="large">Large</option>
</select> <input name="on0" type="hidden" id="on02" value="size">
</form>

<form target="paypal" action="https://www.paypal.com/cgi-bin/webscr" method="post">
<input type="hidden" name="cmd" value="_cart" />
<input type="hidden" name="add" value="1" />
<input type="hidden" name="bn" value="webassist.dreamweaver.4_5_0" />
<input type="hidden" name="business" value="XXXX" />
<input type="hidden" name="item_name" value="Womens T-Shirt" />
<input type="hidden" name="amount" value="29.00" />
<input type="hidden" name="currency_code" value="USD" />
<input type="hidden" name="return" value="XXXX" />
<input type="hidden" name="cancel_return" value="XXXX" />
<input type="hidden" name="receiver_email" value="XXXX" />
<input type="hidden" name="mrb" value="R-3WH47588B4505740X" />
<input type="hidden" name="pal" value="ANNSXSLJLYR2A" />
<input type="hidden" name="no_shipping" value="0" />
<input type="hidden" name="no_note" value="0" />
<input type="image" name="submit" src="http://images.paypal.com/images/x-click-but22.gif" border="0" alt="Make payments with PayPal - it's fast, free and secure!" />
</form>

So effectively what I'm wanting is a visible S, M, L option which you click and then go to the Paypal window and then it shows the user what they've clicked (as therefore passes it onto the persons email).

you have created the size list as a seperate form, it needs to be included in the same form ass the other hidden elemens:

<form target="paypal" action="https://www.paypal.com/cgi-bin/webscr" method="post">
<select name="os0" id="select">
<option value="small">Small</option>
<option value="medium" selected>Medium</option>
<option value="large">Large</option>
</select> <input name="on0" type="hidden" id="on02" value="size">
<input type="hidden" name="cmd" value="_cart" />
<input type="hidden" name="add" value="1" />
<input type="hidden" name="bn" value="webassist.dreamweaver.4_5_0" />
<input type="hidden" name="business" value="XXXX" />
<input type="hidden" name="item_name" value="Womens T-Shirt" />
<input type="hidden" name="amount" value="29.00" />
<input type="hidden" name="currency_code" value="USD" />
<input type="hidden" name="return" value="XXXX" />
<input type="hidden" name="cancel_return" value="XXXX" />
<input type="hidden" name="receiver_email" value="XXXX" />
<input type="hidden" name="mrb" value="R-3WH47588B4505740X" />
<input type="hidden" name="pal" value="ANNSXSLJLYR2A" />
<input type="hidden" name="no_shipping" value="0" />
<input type="hidden" name="no_note" value="0" />
<input type="image" name="submit" src="http://images.paypal.com/images/x-click-but22.gif" border="0" alt="Make payments with PayPal - it's fast, free and secure!" />
</form>
