Items table

How can one create an index that uses the long description column without running into the error of table type not allowing a fulltext index? How can one make sure that that column can be succesffuly searched?

The way that this question is worded I'm not so sure about the intent. If you are not allowed to set the index for the table to the text column there is not going to be a simple way to work around that. If you can please post back with some more detail about what this is preventing you from doing that would like to accomplish, there is possibly another way you can do it that would not require this type of change.
