Universal email Your Message
At the top of an incoming email message from Universal Email I get a Subject Line of Your Message.
I would like to change that but cannot find how to do this.
Can anyone please advise?

The subject line can be edited through the server behavior. Just open it up from the Server Behaviors panel and change the Subject field.
If you are talking about within the body itself, that can be edited by opening the page being used as the email body. It is usually stored in the webasisst/email/templates folder.
At the bottom of the email which arrives after a send is:
Hidden Field:
SimpleContact submit: Contact me
This looks like something to do with the Contact me button.
How can I prevent this from appearing in the arriving message?

On the top of the email template that is used to generate the body of the page it has some php code where you can add a list of fields to be removed from the body. Just add the fields you want removed there and they won't be displayed.
