When an item isn't available... wording

When an item isn't available (say, we have a pair of pants available with options S,M,L and options regular and tall but there is no such thing as Small/tall combination) how do I either change the phrase "not available online" to something else, for example "not available at all"? Or, is there a way to make the combo Small/tall not even possible?

On the manage options page for the product, school down to the variations section.

The variations section allows you to set specific attroibutes like inventory for each available variation.

select the small - tall variation and set the stock to 0

Okay, that helps. But it does come back with a "Sold Out!"

The problem is that small-tall doesn't exist, not that it is sold out, or simply not available online. It's NOT available at all as a thing. But it is there as an option combination anyway. Is it possible to change "Sold Out!" to other words? So instead of "Sold Out!" it reads "Sorry, not available" or something?
