Email Not Sending From Form

I need to specify the server details (smtp etc) but can't find how to do this? I don't have a tab for server settings...

Can you help Jason?

In the universal email server behavior, above the To input box is a row of icons, one of them is an envelope, click that icon to access the SMTP server settings screen.

Server Requires Authentication

Found it thanks Jason!

Server also requires authentication - I can't find options for that in the script, what should I be doing?

your using the bindings for the Validated Entries:
<?php echo (ValidatedField("contact","Full_Name"))?>

you should be using the bindings from the form collection instead, it should look like:
<?php echo(isset($_POST['Full_Name'])?$_POST['Full_Name']:""); ?>
