Power CMS Builder uses the CKEditor version 3.5.2 which is not enabled on IOs.

an update to CKEditor 3.6.2 was released that enables the edit or on IOs 5 devices:
CKEditor_3.6.2_released

the upgrade instructions in the CKEditor install guide:
Installation

can be followed to upgrade the version of CKEditor in Power CMS builder.
