order management

I am selling a product that has to be built once it is sold. i also need to have a ticket system in place that will be updated about 7 times and where the old update cannot be deleted. This update process should also have a relationship to the item and not where you have a menu that selects the item as there will be about 1,000 items sold and being worked on at any time.
Do you think that if I have all of the orders table handle all of the partiulars about the order and then use the orderdetails table as the ticket system that this might work? Or, is there a better way?
Any help would be appreciated.

Thanks anyway, but I realized my errors and I see that I can just bind what ever fields I need.
