Completed PS3 re-install to remote server

I have a complete PS3 store in place on a test server, with a considerable amount of customization to the database, shopping cart, checkout, etc., to meet this customers needs. I now want to install/upload to the real server. Is there a written process for doing something like this?

I can perform a fresh install on the new server, and can use phpMyAdmin to export the sql file on the test server database and import it to the new database. I can then upload all the site files from the test server to over write the newly installed files. What would be the files that I would not want to over write? Globals? any others? Is this the right process?
