Order of option's values changing

My customer will be selling custom t-shirts on their site. She was having so much trouble with her database (timing out, internal server errors, product option values not showing up correctly), that I sorta started over with her database. I kept her wa_settings and content-related tables in there, but imported blank product-related tables.

I know this is tedious, but you need a little info before I get to the problem.

My customer entered all her basic t-shirt designs without any options. No problem.

Then she added the following options to each design:

ADVANCED:

SIZE
- Adult Small (default)
- Adult Medium
- Adult Large
- Adult XL
- Adult 2X
- Adult 3X
- (and we will eventually be adding five youth sizes to this option set)

SLEEVE
- Short (default)
- Long

SLEEVE ART
- No (default)
- Yes

SIMPLE
ART LOCATION
- Front
- Back

For the first 50 or so designs, everything went just fine. She would add SIZE, set the default value, and add its options.

She would add SLEEVE and its values, and it would appear on the screen below the SIZE options.

Then she would add SLEEVE ART and its values, and it would appear after the SLEEVE options.

At this point, her products table had 1000+ rows in it.

Then all of a sudden, things started getting hinky again. When she adds the second option - SLEEVE - it:

1. appears on the screen above SIZE
2. no value is listed as the default in the drop-down box

The same thing happens for SLEEVE ART. (See screenshot.jpg)

She can re-select the default value, it says the value has been changed, the screen moves back to the top, and the default value box is empty again.

In addition, if you go look at the product in the store, while it shows the correct default value on all options, the drop-down list for all Advanced Options shows all values in reverse order. SIZE, for example shows:

- Adult 3X
- Adult 2X
- Adult XL
- Adult Large
- Adult Medium
- Adult Small

If you will go look at the store, you will see what I'm referring to.

To see an example, click on the TRINITY category.

Look at FAITH WINGS first - its options are correct.

Then look at JOHN 3 16 - its options are in reverse order.

As I mentioned, we've just started over after she had been working on the products for a month. I hated it for her, but I hate it worse that the same problem is happening all over again. I'm afraid it's a sign of more trouble to come, too.

Is this fixable? Is there some maintenance I should do on the database to help things run smoothly? Do you want to open a ticket and let me send you the database?
