Are you using one of the preset template files for the body of the message? If so you can open that page in the webassist > email > templates folder to add in just the values that you would like to see.

Open this page and go to Bindings > Form Data, and select the page with the form on it. Now you will have that form's elements available to you from the bindings panel. Just drag and drop them onto the page where you would like to see them.

It is this code that is making it print out all of the values:
