Demo with ecart

Is the any way to make a demo using ecart? Some of my client would like to use a demo before they go into production. I run into a problem when they ask me which gateway to use.
All i would like to do is add the order to the database like it has been processed and be able to send a confirmation email. So basically do all the functions EXCEPT process the credit cards.
Help on this ASAP would be great.
