Default Sort Criteria

How do I define a default sort criteria for a repeat region when a page loads? Right now when the page loads it appears to be sorting by ID. I want it to sort automatically by the time the record was entered into the database (this is a column that I have set up). I type "ORDER BY insert_stamp DESC" into the default clause but nothing happens. Then, when I go back to the sort window the default clause is empty again.

Also, while I'm asking, if I have a column containing first_name, middle_name, and last_name all under the column heading "Name", how would I tell it when the column header is clicked to sort by last_name, then first_name, then middle_name?
