What you are getting should just be the header of the email message. When you crafted the body were you following the Solution Recipe for sending form contents in an email?

Here is a link to the Universal Email support page, if you have not already looked at them there are two Solution Recipes that deal with sending the form contents in the message. The HTML is a neater way of dong it but you should also be able to send in plain text.
