Setting the correct time zone

Hi there

I'm hoping you can help with the following, as unfortunately my hosting company have not been able to set the correct time zone on my site.

They put the code date.timezone="Australia/Melbourne" into the php.ini file but it hasn't made a difference!

Currently when an order is placed the time recorded for the order is 2 hours exactly behind the current time here in Melbourne, Australia.

Do you know whether this would need to be put somewhere else or can I just hard code one of the relevant php files so that it adds 2 hours onto the current time that the server is registering ?

Any help or guidance you could provide would be much appreciated, it's not a big deal if it can't be resolved but If I can correct the time etc that would be cool.
