Creating a report from a shopping cart

We have a client who would like to create two reports from there website sales:
1. Order Report (Individual orders by due date including (item name, qty, customer name, and pick up or delivery date)
2. Production report. Giving qty total of each specific product by due date (item name, qty of each item and the due date for the item (e.g. on August 28 they need 55 Red Velvet cupcakes made for either pick up or delivery)

We would like to know if or how this can be done. There store has already been created, we now need to set up these reports. I'd be happy to include any files if needed.

Any direction would be greatly appreciated.
