HTML Editor Adds Extra Tags - Breaks Email Formatting In Universal Email

I have an issue occurring between HTML Editor and Universal Email.

If I add data via my insert/update forms with instances of HTML Editor installed, the textareas with HTML editor installed add a bunch of code as follows:

<html dir="ltr"><head><title></title></head><body>&#160;</body></html>

Even if the textarea is skipped and left blank, the database field contains the above.

It is adding this to the following text fields/areas in the attached form:
introParagraph, unitInfo, financialInfo, buildingInfo

This renders fine on the web, but the problem occurs when I use Universal Email to send the database listing in HTML format. The extra code breaks the HTML formatting when received in my email inbox.

Attached is my insert.php page code to help troubleshoot.

I am using:
HTML Editor 2.0.2
DataAssist 2.0.8
Universal Email inside CSS Form Builder 2.0.0
