1) you could do a mod rewrite with an .htaccess file

2) First you would update the database and add the columns, then you would add the fields to the insert form where you want them to appear. Then you would use DataAssist on the insert page so that those fields would update the associated fields in the database. Then you would add the same fields to the products update page, but you would have to add the fields to be updated by hand since the code was too complex to use dataassist (because of the product options and update all categories features)... but that wouldnt' be too hard either, just find the rows that correspond to the existing fields and copy and paste for the new fields.
