You will need to manually remove the PayPal button from the checkout page to have it not show, there is no setting that will do this for you. On your checkout page look for the following code:

<?php if(!WA_Auth_RulePasses("No Payment Gateway")){ // Begin Show Region ?>

      <div class="checkoutHeader">Fast, Secure Checkout with PayPal</div>
      <div class="contentBox">
          <form name="PayPal_ExpressCheckout_form"  action="<?php echo $_SERVER["PHP_SELF"]; ?>" method="post">
            <p><input type="image" alt="PayPal Express Checkout" name="PayPal_ExpressCheckout_button" id="PayPal_ExpressCheckout_button"  src="WA_eCart/PP_ECO_Scripts/btn_xpressCheckoutsm.gif" />
          <p>Save time. Checkout securely.<br />Pay without sharing your financial information.</p>
      <br />
      <?php ?>

This code in the default file starts on line 591 and end on line 600. As for the xml error you are getting it might have to do with the expiration year value that you entered. Did you enter a 4 digit year? If not you should try it like this, if this is what you have tried you can try with a two digit year to see if that works. Please post back and let us know if you continue to have any trouble with this.
