You should be able to get a full listing of the cart contents in your email receipt. If you did not check this option when going through the wizard you will need to add it in manually during the checkout.
You could add a Universal Email server behavior to your checkout success page. For the body of the message you can just add in an eCart display manager, for the display manager select the email friendly cart. This will add in an html based based cart display for the email. This should get you the receipt with all of the details in it. You can send one to the customer and one to the site admin.
